While American audiences may not as familiar with Roger Mooking as they should be, Canadians absolutely love him. He’s a celebrity chef and award-winning musician. The dude hosts shows on Cooking Channel here in the US (Man Fire Food and Everyday Exotic) and appears regularly on the Food Network both in Canada and the US. He was also a member of hit Canadian hip-hop/R&B group Bass is Base. This is all to say that the Trinidadian-Canadian Mooking has serious credentials.
As such, he follows the trend of celebrity chefs opening airport restaurants and HMSHost brought him in to open his own joint inside Toronto’s Pearson Airport (YYZ). Twist by Roger Mooking has a crazy-eclectic menu featuring everything from a Spanish take on Polish perogies to a Mexican spin on mussels. I haven’t tried the dishes, so I don’t know if they’re genius or just plain weird, but you can judge for yourself. Here’s a brief intro video (menus are below):
